Last Sat night around 2:30am I wanted cookies so I made a batch. As follows:
Preheat at 350 degrees, get out yer cookie sheets for 24 cookies.
Sift/ whisk around these dry ingredients.
2 1/4 cup flour
*1 Tbsp baking soda – you heard me.
1/2 tsp salt
a shake of clove spice. Just enough to cut the sugary sweetness to a mellow warm place
Cream the first three with a mixer well then add the eggs and vanilla.
1 cup butter, room temperature
1 cup brown sugar
1/2 cup white sugar – optional
2 eggs
2 tsp vanilla
Pour in the dry stuff in two or three pours. Stop when just combined. Stir in the chips to not overmix
1 cup butterscotch chips
1/2 cup chocolate chips
Scoop out and bake for 8-10 minutes. My recipe here ensures no major spreading when baking. These are buttery and solid enough to come right off the cookie sheet after only a minute to cool. Eat until death sets in.
*This is probably twice as much as you’ll see in most recipes but I wanted a crackly crisp exterior and maximum inner chewyness. Which are scientific terms. It is science to put in so much baking soda, promise.
